My mom came over to do some holiday baking with me and the kiddos. She brought a new recipe for Eggnog Cookies that she wanted to try out. So, we needed a dairy-free eggnog recipe…
So, I hopped on Pinterest and found a paleo eggnog recipe. After mixing up the paleo eggnog, I realized it still wasn’t quite what we expected eggnog to taste like, so I figured I would do a few additions. We were amazed by this delicious and easy Paleo Eggnog in the end!!!
And it is so easy… How rewarding!
How to make paelo eggnog
Start by whisking the eggs, egg yolks and maple syrup on low heat in a medium saucepan. Slowly, you will add in the almond milk while continually whisking to combine completely.
At this point, you will keep whisking continually. This way, the eggs will not burn and turn into scrambled eggs on the bottom of your pan. ????
Next, you will add in the cinnamon, nutmeg and vanilla. You will continually whisk the eggnog until the mixture thickens. This is usually about 20 minutes. So, you can think of it as a Christmas exercise to get physically fit before your guests arrive as well!
Once the eggnog is thickened, you can pour your holiday beverage into a container and let it cool down. Lastly, you can enjoy or store in the fridge!
Your fancy Paleo Eggnog will last in the refrigerator for up to four days. You will want to shake before serving after it has been refrigerated.
Now say, “Ta-da!” ♡
