My Solution to Missing Cookie Ingredients

Unfortunately, I realized I only had about half the chocolate chips I needed. With two kiddos at home, I wasn’t going to run to the grocery store for just chocolate chips. I’m too lazy for that, ladies… So, I decided to improvise.

I realized I had an open bag of mini marshmallows that needed to be used up, so I figured I would give it a shot.

I added mini marshmallows to make up for the other half of the chocolate I was missing. They were awesome!

The marshmallows made the cookie ooey and gooey, but also when part of the marshamllow was on the cookie pan it became carmel-y and chewy.

Cookies with a variety of textures are really fun, so this one was great for that.

A Sugary Secret

Cookies with the best texture of chewy, yet soft, are cookie recipes that call for half brown sugar, the other half white sugar.

Brown sugar has a great caramel flavor but also adds air pockets to your cookies for a thicker cookie. The consistency of these S’mores Cookies will have a great, nice chewy texture!

While, white sugar, when creamed with butter is great for making your cookies light and fluffy. It is also great at helping with leavening. If you are looking for more crisp cookies, with a snap, then white sugar is a great choice.

So you can see that cookie recipes, with both sugars, are the best!

Healthy S’mores Cookies?

So I wouldn’t call any cookie, with refined sugar in it, healthy. But these cookies have less sugar packed than regular gluten cookies.

This recipe calls for almond flour which not only gives a great nutty taste and a great texture but it also adds protein to the cookies!

Most cookie recipes call for all-purpose flour which breaks down into sugar. Sugar, sugar and more sugar. So these protein S’mores Cookies are a wonderful surprise!

The dairy-free chocolate chips you can use are Enjoy Life brand. They have all different types of chocolate chips: dark, semi-sweet, etc.! You can find the Dairy-Free Enjoy Life Chocolate Chips here.

S’mores Cookies

These gluten & dairy free S’mores Cookies are so soft and chewy. The marshmallows add a delicious ooey gooey texture and also a caramel-y flavor!

Ingredients

Instructions

  • Preheat oven to 350°F and line your baking sheets with parchment paper. 
  • Cream together butter, sugars and vanilla extract in stand mixer
  • Then beat in eggs. 
  • Mix in almond flour, baking soda, salt and mix well. 
  • Add in chocolate chips and mini marshmallows. 
  • Drop about 1 1/2 Tbsp of dough onto baking sheets – 2 inches apart. 
  • Press each ball of dough down to flatten, so they bake evenly. As you would a peanut butter cookie, for example.
  • If you are baking two trays at a time, bake for 6 minutes and rotate pans in the oven. (This will help them bake evenly)
  • Bake for 6 more minutes. Watch them carefully. Take cookies out when the bottoms are golden brown. 
  • Leave on cookie sheet for 5 minutes before removing and cooling on cooling rack

Eat ‘Em Up

Additional Tip: If your butter or ghee does not have salt in it, make sure your 1/4 tsp is heaping, in this case. The extra salt tones down the sweetness of the cookies.

S'mores Cookies Protein Cookies

Storage Tip: Store these as you would normally in a container, but don’t tighten the lid. Since they are moist, soft cookies, don’t worry about them drying out!
