Strawberry Rhubarb Oatmeal Bake
I made this Strawberry Rhubarb Oatmeal Bake one morning for a group of friends and it turned out really yummy! Having an oatmeal bake ready for breakfast makes things go so smoothly in the morning.

Strawberry Rhubarb Oatmeal Bake to the Rescue!
Ladies, you know when you need food for a potluck or a get-together and completely forget to grab anything from the store? That is how this Strawberry Rhubarb Oatmeal Bake came about!
The night before, I realized, “Oh crap, I need to make something for tomorrow!” My normal go-to is cookies of some sort, but since this was for breakfast, I decided I should try a new version of an oatmeal bake.
I have made it quite often in the past; but usually, I would use berries and bananas. I wanted to switch things up a bit and I am glad that I tried something new!

Fresh or Frozen Fruit?
We are fortunate in that we have a small rhubarb patch in the back of the home we moved into two years ago! (I was really excited to discover this the spring we moved into the home.)
So for this Strawberry Rhubarb Oatmeal Bake, I wanted to use up my frozen rhubarb, from this past summer. So, I thawed out my rhubarb and drained off the moisture.
You can also save some of it to sub out some of the almond milk
Frozen rhubarb is less voluminous than fresh rhubarb, so please note that you may not need as much fresh rhubarb as you would need frozen rhubarb.
The strawberries in the Strawberry Rhubarb Oatmeal Bake were fresh, just because slicing fresh strawberries is way easier than frozen.

Feel free to add gluten free oats to your Strawberry Rhubarb Oatmeal Bake!
Some people have issues digesting oats unless they are gluten-free and some people (like me) don’t seem to have a problem with regular oats.
Not sure why that is, but I don’t eat it very often so maybe that’s why? I don’t know… Let me know if you know. 🙂

Strawberry Rhubarb Oatmeal Bake
Strawberry Rhubarb Oatmeal Bake
Ingredients
Dry Ingredients
- 4 cups old fashioned rolled oats – gluten free
- 1 cup + 2 tbsp brown sugar separated
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1 1/2 tsp baking powder heaping
- 1/2 cup sliced strawberries
- 2 cups thawed rhubarb drained
- 2-3 tbsp chopped almonds
Wet Ingredients
- 3 eggs beaten
- 3 cups almond milk
- 1 1/2 tsp gluten free vanilla extract
- 4 tbsp unsalted ghee or coconut oil – melted
Instructions
- Preheat oven to 350°F.
- Grease 9×13″ cake pan.
- Combine oats, 1 cup brown sugar, salt, cinnamon, and baking powder in mixing bowl.
- Place half the oat mixture in the baking dish, top with half the rhubarb. Then top with the remaining oat mixture.
- Whisk the eggs, milk, vanilla, and melted butter. Pour over the oats.
- Top the oats with the remaining rhubarb and sliced strawberries.
- Gently shake the baking dish back and forth from side to side to allow the mixture to combine.
- Bake uncovered for about 55 minutes until oats are tender, and the mixture is set.
- Crumble 2 tbsp of brown sugar and almonds on the top before serving.
- Serve immediately or cool, then cover and refrigerate to reheat later.
Notes
Make Ahead Tips
As you can see in the recipe, I labeled the ingredients separately: Dry and Wet. This way, you can easily combine and layer the dry ingredients, including your fruit, the night before, in your 9×13 cake pan.
Then you can also whisk and combine all of your wet ingredients in a mixing bowl with a lid and store the wet and dry ingredients, in the fridge, overnight.
That way, in the morning, you can easily drizzle the wet ingredients over the dry ingredients and pop the cake pan into the oven for a warm, delicious Strawberry Rhubarb Oatmeal Bake breakfast!
Additional Flavors & Toppings
I would suggest using a nut of your preference because the crunch adds a great texture to the oatmeal bake. You can even add chocolate, try not to squeal too loudly. 🙂 You can find the recipe to my Paleo Chocolate here.
