The Best healthy blondie brownie
When I first experimented with this recipe, I was actually craving a blondie brownie. One with a good chew. Almond flour is a wonderful ingredient for a chewy gluten-free cookie or chewy gluten-free brownie.
This cookie cake recipe is terrific without the chocolate chips, too, for a blondie brownie. So, it is kind of like two recipes in one!
Below, I share a few more twists on this recipe with a dairy free caramel sauce and another tip for making it an almond blondie brownie.

Baking Gluten and Dairy Free
We have to bake gluten and dairy-free at our house, since my son has a dairy allergy and I am gluten intolerant.
At first, I was really overwhelmed by having to go gluten free… I wasn’t sure what I would make for any meals, let alone desserts.
However, now, I really enjoy the challenge of making all recipes gluten and dairy-free and surprising people when you say it is GF DF.

Chewy Gluten and Dairy Free cookie Cake
Ooey Gooey & Chewy Cookie Cake
Ingredients
- 2 cups almond flour
- 1/2 tsp baking soda scant
- 3/4 tsp salt
- 1/2 tsp cinnamon optional
- 1/4 cup coconut oil heaping, melted
- 1/4 cup brown sugar
- 4 tbsp pure maple syrup or brown sugar
- 2 large beaten eggs
- 1 tbsp vanilla gluten free
- 3/4 cup chocolate chips dairy free
Instructions
- Preheat oven to 350°F
- In mixing bowl, combine the almond flour, salt, baking soda, and cinnamon. Add the coconut oil, sugar, maple syrup, egg and vanilla extract. stir until just combined.
- (Let your mixture cool before this step, if your coconut oil was hot) Gently stir in chocolate chips.
- Add to skillet
- Place in the oven and bake for 25 minutes, or until the blondie is cooked through.
Dairy Free Caramel Sauce & Additional Flavors
To transform this into a Chocolate Peanut Butter Cookie Cake, you can add 1/3 cup warmed peanut butter and 1/3 cup maple syrup to the top, for a wonderful dairy-free caramel sauce.
If you want to make an Almond Blondie Brownie, you can remove the chocolate chips for this recipe an add a teaspoon of almond extract!
