Easy Paleo Eggnog

  • In a medium saucepan, combine the eggs, egg yolks, and maple syrup on low heat. Slowly whisk in the almond milk to completely combine. Whisk continually.
  • Add in the cinnamon, nutmeg and vanilla. Continue whisking until it thickens. (usually about 20 minutes - exercise those arms!)
  • Once thick, pour into a container and let cool at room temperature. Then refrigerate or serve!
  • Store in the fridge for up to 4 days. Stir or shake before serving.
