Preheat oven to 350°F and line your baking sheets with parchment paper.
Cream together butter, sugars and vanilla extract in stand mixer.
Then beat in eggs.
Mix in almond flour, baking soda, salt and mix well.
Add in chocolate chips and mini marshmallows.
Drop about 1 1/2 Tbsp of dough onto baking sheets - 2 inches apart.
Press each ball of dough down to flatten, so they bake evenly. As you would a peanut butter cookie, for example.
If you are baking two trays at a time, bake for 6 minutes and rotate pans in the oven. (This will help them bake evenly)
Bake for 6 more minutes. Watch them carefully. Take cookies out when the bottoms are golden brown.
Leave on cookie sheet for 5 minutes before removing and cooling on cooling rack.
