Ingredients

uncooked gluten free pie crust

raw or thawed, drained and dried rhubarb
medium pieces

beaten

full fat unsweetened coconut milk
use fat off top first

gluten free flour

gluten free vanilla

Instructions
Preheat oven to 400°F
Put rhubarb in uncooked pie shell.
In a mixing bowl, mix the remaining ingredients.
Pour over rhubarb in pie shell.
Bake 10 minutes, then reduce heat to 350°F and bake for an additional 40-50 minutes. Or until a knife comes out clean.
Let the pie cool completely before serving. Store in refrigerator for up to 4 days.
